Scenario: 1st serve is out, 2nd serve goes in and a rally
commences, a ball rolls onto the playing surface from
an adjacent court and a let is called. Is the point replayed
from the 1st or 2nd serve?

Help me settle an arguement, I'm pretty sure I know what the
answer is but I need an independent third party to back me up.

THE ANSWER IS: THE POINT IS REPLAYED FROM THE 1ST SERVE OF COURSE

Since it play was interrupted in the middle of a point, the entire
point should be replayed, so the server gets a first serve.

In fact, if a point is replayed for whatever reason, it is ALWAYS
replayed from the 1st serve.
