does anyone know a web site with a table of what sail size in general should
be used for a give body weight vs wind speed or is there a formula?

A nice thought Mitchell, but unfortunately there are many other variables;
ability, style, waterstate, to name but a few.  If there was a formula, it
would have to be very complex.  I'd love to be more constructive, 'cos I
know full well what you are after.............but I'm afraid it is all to do
with experience and trial and error.  ;-(

Check out the Gear Wizard on The Windsurfing Classifieds
(http://www.windsurfingclassifieds.com/). You just type in your weight,
ability, intended conditions, and it will spit out all the specs ranges for
the equipment needed.   It also will list what gear in the database matches
your needs.  Check it out!

Many times I've seen people sailing at the same spot for hours, with
same-sized guys on sails from 3.5 to 6.0 or 4.5 to 6.8, all arguing they
were on about the right size sail. No chart's gonna compensate for that much
PREFERENCE.

Others are probably right that this is completely personal, but here's my
personal table of sail size (185 lbs, intermediate skill level):

windspeed  Sail                  Board
8-13 mph     9.0 camless   Wide Early Planer (AHD)

14-16           7.0 camless    Wide Early Planer(AHD)

17-19           7.0 camless    100 liter slalom (Old F2 Axxis)

20-25           5.5 camless    100 liter

26-30           4.5  camless   100 liter

30-35          3.9  camless    100 liter (I need a smaller board)

35+             need smaller sail and board

I keep all my equipment in my van, so I have tried to build a board/sail quiver
that has the widest range--there are probably gaps between my sail sizes, but
this works okay.  I own camless sails only because they were my cheapest
options when I bought them all.  One other interesting thing:  my masts overlap
so that I can use my 490 with either the 9 or 7 meter sail, a 460 with the 7 or
5.5, and a 430 with the 5.5 and 4.5.  If I think the wind is going up or down,
I can use a different mast so that I don't have to completely derig.

Lastly, I probably will try to add a smaller board (~85 liters) and 1 or more
smaller sails to this quiver when I come across good used deals.

Not aware of any such table or formula. It always seems to be a case of trying
it and finding out what suits you.

There are so many factors involved such as skill level, sailing conditions, kit
etc. that it'd be very difficult to combine into a table.

Doh!!!

Mind you, I couldn't get it to work; but doubtless it does.  I'd imagine it
might be enough to give someone an inkling of which sail to use.
