Can anybody explain what actually causes spin-out (in some detail)
and what can be done to prevent it.
I understand that it has a lot do with "technique".
But what is the correct technique?
I have also heard it has to do with backfoot-pressure?
Can anyone help.

Ah another FAQ rears its ugly head. The best reference that I can
recommend is Richard Caldwell's article "A Low Drag Solution for
High-Performance Sailboard Spinout" in the AIAA Student Journal,
Fall 1989, pp 20 - 28.

A lot of the article is concerned with analyzing his foils (which
he later commercialized), but there is interesting discussion of
what causes spinout. He more or less debunks the myth that it is
caused by cavitation.
