What's probably happening is that you may be giving the horse the
signal with your leg to canter but your body posture is still set-up
for the other lead, so the horse will a) get confused and b) take the
canter lead being cued by your body posture. Check if your horse will
canter on the correct lead when on a lunge or running free in a round
yard. If the horse automatically adopts the correct lead when on a
lunge or running free, then the problem is in your canter signal -
most likely your body position when you give the signal. Have
some-one lunge the horse with you sitting in the saddle as  passively
as possible and see if it still takes the correct lead. This is
probably not a horse problem but more likely a rider problem. How do
I know - I've been there, done that. Once I straightened out my body
position, my horse has NEVER taken the wrong lead again.
