I'd suggest the Westchester Triathlon...well organized, w/a relatively
late start (~9:00am) and only a 40min drive from Manhattan. Race
distances are 1/2 mile swim, 14 mile bike, and around a 4mile run.
Swim starts at Rye beach, the bike/run transition and the finish are at
White Plains HS (so the only downside is the start/finish aren't at the
same location). Contact 'Westchester Road Runners' for race info and
details.

In response to Richard Barrer's question about sprint tri's within 1-1.5
hour drive from NYC, Linda Serenson Colet replied:

I agree that the Westchester tri is a great race -- I did it last year --
*BUT* they have cancelled it this year.  The rumor I heard was that
some of the police depts. of towns it passes through asked for a bunch
of $'s, they didn't have the sponsorship they wanted, and they decided
to cancel it for this year and wait to do it right again next year.
Incidentally, they changed the race so that both transitions are in the
same area by Rye beach.

Two other sprint races I'm doing that are within an hour of NYC are:

8/6 Greenwich Cup Tri (never did this one before)
8/13 Harriman St. Park (nice race, but be forewarned it is a fairly
        challenging bike course)
